Basic Refrigerated Cheesecake



Biscuit Base:

  1.  125g sweet biscuits, crushed
  2.  60g butter or cooking margarine, melted
  3.  Combine biscuit crumb and melted butter.
  4.  Using the back of a spoon, press on to the base of a 20 cm springform pan. Refrigerated until chilled/

Filling:

    * 375g cream cheese s
    * 100g (1/2 cup) castor sugar
    * 20ml (1 tablespoon) lemon juice
    * 3 teaspoon or ½ sachet of Halagel Gelatin
    * 60ml (1/4 cup) hot water
    * 300ml (1 ½ cups) cream, lightly whipped

   1. Beat cream cheese and sugar until smooth.
   2. Beat in lemon juice.
   3. Add gelatin to the hot water and stir briskly with a fork until dissolved. Allow to cool, add to cream
      cheese mixture, mix well.
   4. Fold in cream.
   5. Pour mixture into prepared biscuit case.
   6. Refrigerated until firm
